The ingredients needed to make Bombay Potatoes:
  1. Use 1 waxy potatoes chopped to 2 inch cubes
  2. Get 1 chopped onion
  3. Use 1 chopped garlic
  4. Use 1 tbsp curry paste (see my chicken curry recipe or use Pataks Rogan Josh paste)
  5. Take 2 chopped tomatos
  6. Provide 1 dash of tomato puree
  7. You need 1 garden peas
  8. Prepare 1 chopped chillis red and green
  9. Take 1 tsp wholegrain mustard
  10. Use 1 Fresh coriander to garnish
Instructions to make Bombay Potatoes:
  1. boil the potatoes and set aside.
  2. Heat a dash of olive oil in a saucepan. Add the chopped garlic and onion. Heat for 2 minutes. Add the chopped tomato, chillies, curry paste (my chicken curry recipe contains the recipe for a basic curry paste, or for convienience a jar of Pataks or Sharwoods curry paste, I use Rogan Josh or Jalfrezi, its concentrated so a tbsp is all that is usually needed). Add the peas, wholegrain mustard and tomato puree also and simmer for 5 minutes on high.
  3. Add the potatoes, stir well and simmer on low for a further 5 minutes. Garnish with fresh coriander. Serve!

Serve this best ever bombay potato together with Dal Makhani, Cucumber Raita, Cumin Rice & Roti to complete the great Indian meal combo. Drain and leave to steam-dry in the colander.
